Cauliflower “Risotto”
Again. NOT RISOTTO. Nut still good and a great substitution if you are watching your carbs. (Spoilsport)
Rice up one whole cauliflower by pulsing it in the food processor. Or, just buy the riced stiff if you prefer.
Chop:
1 onion
2 cloves of garlic
In a hot pan with a dallop of olive oil, sautee the onion and garlic until shiny. Then add the cauliflower and give it about 2 minutes. Then add:
½ cup chicken stock
Cover the pan and let simmer for 15 minutes. Then add:
1/3 cup parmesan cheese
You can add anything you like to this,, but all vegetables will need to be cooked in the first phase with the garlic and the onion. Meats will wantto be cooked separately and layered over top.
