Chickpea Blondies
I’m not a big one for faking things. Especially when it comes to sugar or pastry, because really, what’s the fucking point in faking it? If you’re going to do sugar, just do damn sugar. But with the gluten-free fiasco in my house, these have worked out as a nice semi-fake.
You know, keepin it kinda real.
Combine in a food processor, blending until smooth:
I can chickpeas, drained
¾ tsp. Baking powder
1/8 tsp Baking soda
¼ tsp salt
¾ cup Brown Sugar **
¼ cup Quick roll oats
1 T ground flax
¼ cup nut butter or seed butter
Mix in 1 cup chocolate chips and pour into a lightly greased 9” x 9” pan. Bake at 350 for 30 minutes.
** Quick note: I bought molasses for some strange reason ages ago. That bottle has been sitting in my cupboard for ages—it literally never goes bad. Shit will survive the apocalypse. However, did you know that brown sugar is nothing more than sugar with molasses rubbed into it? No joke. Who knew?
So if you are like me and have this stuff in the dry goods, just pour 1-2 Tbsp into a cup of sugar and rub it in with clean fingers until it looks precisely like you would expect. Saves time and a ton of money and yet another box of brown sugar in the pantry.

***Oh, and if you don’t have any of the above, seriously just use regular sugar, maybe add a tick of maple syrup for the sticky. Its not a critical thing.
