Hidden Vegetable Cheeseburger Macaroni (Vegetarian optional)

Okay, this is in two parts. So use your common sense here if you are a veggie, cool?

Start your small pasta (shells, elbows, bow ties, etc). While that is cooking:

Chop up into teeeeeny tinnnny pieces:

3 or 4 white mushrooms

½ tomato

6 cauliflower florets

4 brussells sprouts


And when I say teeny tiny, I mean it!!

Sautee these in a pan until soft, then if you are adding meat, do so now. Cook all together until meat is brown and the fat is re-absorbed. Set aside.


For the cheese sauce, in a small sauce pan melt:

2 Tbsp butter


Then add:

2 Tbsp flour (3 if using Gluten free flour)


Stir until you get a paste and then add slowly:

1 cup milk

Its going to keep getting pasty, and you have to keep stirring. Then add:

a handful of cheese at a time until you have the consistency you want

Pour the sauce over the meat and blend. Then add the pasta and serve.
