Leftover Rice cakes with Vegetables, Herbs & Cheese
The ultimate clean up dish. Go ahead and pull whatever cheese and vegetable is left over in your fridge and also both styles of leftover rice. If you don’t have any left over vegetables, this goes great with shredded zucchini or spinach.
Measure out into a large bowl:
2 cups of your leftover rice
Mix in:
2 eggs, lightly beaten
1 cup finely chopped vegetables (or zucchini/ spinach)
handful chopped chives
1 cup cheese, shredded or grated
1 teaspoon salt
½ teaspoon black pepper
Heat a large skillet and melt:
2 tablespoons butter
You want it to be bubbly but not brown.
Working in batches, and adding more butter as needed, use a large spoon to place a scoop of the rice mixture in the pan. Press down with the back of a spatula to form a patty. Cook 3 to 4 minutes, or until golden and crisp on the bottom. Gently flip patty and cook another 3 minutes or until golden.
Place patties on a paper-towel-covered plate to drain.
