General Tso’s Cauliflower


Okay. I know I am asking y’all to buy some extra shit that you may not think you need. But I’m going to say that once you get this recipe into your mouth, you will want to General Tso everything. The man asks for it once a week, so just trust me and spend the extra few bucks. The ingredients keep and you will make this dish again.

Start some rice.

Break the florets into 1 to 2 inch pieces. Toss them lightly in cornstarch (if you have it), or potato starch (if you have it) or flour (I KNOW you have that because I told you to buy it). Just give the florets a little coating and pop them in a 350 degree oven. Bake for about 20 minutes or until they are halfway to soft, not crunchy at all, but not squishy. You feel me on that?

While they are baking….

In a large pan, sautee in a bit of oil:

3 cloves of garlic, chopped

½ inch ginger, chopped

Add:

1 ½ to 2 cups barbecue sauce

2 T soy sauce

2 T sesame oil

1 T vinegar

Stir like crazy, this stuff is going to behave really strangely. You have to make sure all the oil incorporates into the barbecue, so keep it moving until you have a thick bubble going. Once it is all incorporated, maybe 5 minutes or so, pull it from the heat. Sprinkle some sesame seeds if you have them; if not, no worries.

When the cauliflower is done, toss it in the pan and stir until the sauce covers everything. Serve over rice

Note: I’ve made this with brussels sprouts, broccoli and green beans. Just sayin.
