Poke bowl
This is mostly a raw meal, so it is a sophisticated version of we lovingly call “dippin’ dinner”. In other words, its a great way to get people to eat vegetables without going crazy. This is essentially a fancy crudite tray. Do know that the tuna MUST be sushi grade, and that can get pricey. So if that is out of your budget, you can fry up some tofu and serve that instead.
Start some sticky rice, or some plain short grain rice. Cook until fluffy, then toss with 1 Tsbp of white vinegar. Place on the bottom of a bowl.
Slice into thin strips:
1 avocado
1 lb Sushi grade tuna
7-8 pickled radish slices
Shuck your steamed edamame (or open the defrosted bag. SO MUCH EASIER)
Pop open the bag of shredded carrots (or shred your own, buy WHYYYY)
Crack the jar of pickled ginger (don’t kid yourself, you aren’t pickling ginger at home)
Then layer everything in sections into your bowl. Serve with a side of wasabi and soy sauce.
