Shopping List & Menu

You’ll notice that I try to do one big meat a week that will last throughout the week. Some of this is because I don’t like to eat all that much meat; some of this is because I have been super broke in my life and meat is the most expensive thing you purchase at the grocery. Its a learned habit, for sure, and I get that a lot of Americans prefer to eat meat more than twice a week.

I’m not going to try and change your mind, but there are a lot of reasons why one should limit the intake of meat. You do your own research, ya? Until then, we are just going to keep on keepin’ on.

Menu:

Pan Chicken with potatoes and Artichoke hearts

Ramen (the good stuff!)

Artichoke patties over Cauliflower Risotto

Meatloaf with Asparagus

Polenta with cheese & Vegetables *Sauce optional

Meatloaf Sandwiches with Sweet Potato Fries & BBQ Sauce

Chicken Legs and Thighs Polenta/Cornmeal

Artichoke Hearts x2 jars Shredded Cheese

2 lbs ground beef or turkey Spinach

Mushrooms x2 Cherry Tomatoes

New Potatoes Eggs

Sweet Potatoes x2 Buns

Cauliflower Bananas x3

Asparagus Walnuts *optional

Bean Sprouts Cellophane Noodles

Despite having 2 meats on the menu, this week is decently light. It will provide a good amount of healthy vegetables and balance it out with a dallop of indulgence, which works for me. You can’t be good all the time. The shopping list is coming in at 70$ for a family of four, although I did choose some organic options so you may be able to find it all cheaper.
